Biscuits and spicy-sweet butter—it’s a match made in heaven! And adding sliced ham to turn it into a breakfast, brunch, or lunch sandwich only makes it better.

But that said, you can make either or both parts of this recipe. The biscuits are soft, tender, and delicious on their own. And while the spiced sweetpotato butter is amazing on the biscuits, it’s so sweet and flavorful, it’s also great on French toast, pancakes, waffles, or any kind of bread, rolls, or toast. We even like it smeared on chicken and pork chops!

Sweetpotato Biscuit Sandwiches with Spiced Sweetpotato Butter

Makes 12

Ingredients:
For the biscuits
Two 10- to 11-ounce orange-fleshed sweetpotatoes, peeled
2 cups all-purpose flour
4 teaspoons sugar
4 teaspoons baking powder
1 teaspoon salt
6 tablespoons (3/4 stick) cold unsalted butter, cut into 1/2-inch pieces
1/3 cup milk

For the spiced sweetpotato butter and sandwiches
6 tablespoons (3/4 stick) unsalted butter, softened
3 tablespoons maple syrup
3/4 teaspoon ground allspice
3/4 teaspoon ground ginger
1/2 teaspoon ground cloves
Salt to taste
12 ounces sliced ham

Instructions:

  1. To make the biscuits: Preheat the oven to 400°F.

  2. Wrap the sweetpotatoes in damp paper towels and microwave on high until very soft, 8 to 12 minutes. Transfer to a bowl and mash with a potato masher. Measure out 3/4 cup of the mashed sweetpotatoes for the biscuits and 1/3 cup for the sweetpotato butter (save any remainder for another use) and set aside to cool.

  3. In the bowl of a food processor, combine the flour, sugar, baking powder, and salt and pulse a few times to mix. Add the cold butter and pulse until the mixture resembles a coarse meal. Add the milk and reserved 3/4 cup of mashed sweetpotatoes and pulse just until the mixture comes together.

  4. Transfer to a well-floured surface and, if need be, gently knead a few times to form a dough. Pat to about 3/4-inch thick, then use a floured 2 1/4-inch biscuit butter to make 12 biscuits, gathering the scraps and gently patting together again as needed.

  5. Arrange the biscuits on a large rimmed baking sheet and bake until lightly browned, 14 to 16 minutes.

  6. Meanwhile, make the spiced sweetpotato butter: In a medium bowl, combine the softened butter, syrup, allspice, ginger, cloves, and reserved 1/3 cup mashed sweetpotatoes. Add salt to taste.

  7. To make the sandwiches: Split the biscuits. Arrange the ham on the bottom halves, cutting it as needed to fit. Spread the spiced sweetpotato butter onto the top halves, then arrange the tops on the bottoms. Serve any remaining spiced sweetpotato butter on the side.
